- 20 oz ( 1 ¼ lbs ) boneless, skinless chicken breasts
- 2 tbsp all-purpose flour
- ½ tsp dried oregano
- ½ tsp dried basil
- ½ tsp sweet paprika
- ½ tsp salt
- freshly ground pepper to taste
- 1 tbsp olive oil
- 3 tbsp unsalted butter, divided
- 3 garlic cloves, minced
- 2 tbsp parsley, freshly chopped
Instructions
- Dry the chicken breasts with a paper towel and cut them into 1-inch pieces.
- Place them in a bowl, sprinkle flour, basil, paprika, oregano, salt, and pepper on top, and toss until coated.
- Heat a large cast iron skillet over medium-high heat, adding olive oil and 1 tbsp butter. Once melted, add chicken pieces in a single layer.
- Cook without moving for about 3 minutes, then flip and cook for an additional 2 minutes.
- Add remaining butter, minced garlic, and parsley, cooking for one more minute until chicken is fully cooked.
- Serve immediately while hot, alone or with desired sides.
Notes
Make sure to adjust the seasoning according to your taste.
For a bit of spice, add some red pepper flakes during cooking.
