- 8 chicken thighs (bone-in, skin-on)
- 2 tablespoons extra virgin olive oil
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 ½ teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
Instructions
- Preheat the oven to 425°F (220°C) and allow the chicken thighs to reach room temperature.
- Pat the chicken dry with a paper towel to eliminate moisture.
- In a small bowl, combine all the herbs and spices for the seasoning.
- Place the chicken in a large mixing bowl and pour in the olive oil and ⅔ of the spice blend. Make sure to thoroughly coat the chicken on all sides, including under the skin.
- Arrange the chicken on a rack set over a baking sheet and sprinkle the remaining spice mixture on top.
- Bake for 35 to 40 minutes until the internal temperature reaches 170°F. Optionally, broil for an additional 2 to 3 minutes to enhance the crispiness of the skin.
- Allow the chicken to rest for 5 minutes before serving.
Notes
For extra flavor, marinate the chicken thighs for a few hours or overnight in the spice blend and olive oil.
Using a rack helps excess fat drip away, leaving the skin crispier.
