Description

Enjoy a delicious Beef Burrito made with savory ground beef, black beans, and melted cheese wrapped in warm tortillas. Perfect for quick dinners or comfort food cravings.


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the ground beef, pressing it into a 1/2-inch thickness and allow to sizzle for 3 to 4 minutes until crust forms.
  3. Season with chili powder, oregano, cumin, salt, garlic powder, and smoked paprika; add the diced onion.
  4. Break up the beef with a spoon and cook until fully browned, about 4 more minutes.
  5. Incorporate the black beans and salsa, cooking until heated through and most liquid evaporates, about 1 minute.
  6. Assemble the burritos by placing a tortilla on a work surface and adding cheese, then top with a portion of the beef/bean mixture and more cheese.
  7. Fold the sides of the tortilla in and roll to secure.
  8. Preheat a nonstick skillet on medium heat and brown each burrito for 1 to 2 minutes per side until golden.
  9. Serve warm with toppings as desired.

Notes

For added flavor, feel free to customize toppings to your preference.
These burritos can be made ahead and frozen for quick meals later.
