Description

These Boxty potato pancakes bring deliciousness to the table with their crispy exterior and fluffy interior. Made from hearty ingredients like cold mashed and grated potatoes, they are a fantastic option for a quick meal or a comforting snack. Enjoy them fresh and hot!

  • 2 cups cold mashed potatoes (can be made well in advance, use a starchy/mealy variety such as russets)
  • 2 cups grated raw potatoes (use a starchy/mealy variety such as russets)
  • 2 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1 teaspoon baking soda
  • 1 1/2 to 2 cups buttermilk (plus more as needed)
  • butter, bacon grease, or lard for frying (vegan: use oil)
  • optional add-ins: chopped green onions/scallions, shredded white cheddar cheese

Instructions

  • Boil the potatoes, drain them, and mash until smooth. Chill until cold or leave overnight.
  • In a small bowl, mix the flour, baking soda, and salt. Set aside. Grate the raw potatoes and wring them dry using a clean kitchen towel.
  • Combine the cold mashed potatoes, grated potatoes, and the flour mixture in a large bowl.
  • Pour in 1 1/2 cups buttermilk and mix well. If the mixture feels too thick, add a bit more buttermilk as needed.
  • Heat butter, bacon grease, lard, or oil in a heavy pan over medium-high heat. Form the potato mixture into individual patties, pressing them flat.
  • Cook each patty until the bottom is well browned, then flip to brown the other side, adjusting the heat as necessary to prevent burning.
  • Transfer cooked boxty to a warm oven while frying the remaining batches.
  • Serve right away while still hot.

Notes

For a richer flavor, consider adding shredded cheddar cheese or chopped scallions to the mixture.
Ensure that the raw potatoes are well-dried to avoid soggy pancakes.
