Description

Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 & 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 3/4 cup chopped cadbury mini eggs

Instructions

  1. Preheat your oven to 325F and line baking sheets with parchment paper.
  2. In a medium saucepan, melt the butter over medium heat, stirring until it turns golden brown and has a nutty aroma. Remove from heat and let cool to room temperature in a separate bowl.
  3. Add the brown sugar and granulated sugar to the cooled brown butter and whisk until well combined. Mix in the egg and vanilla extract, whisking until smooth.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.
  5. Gently fold in the chocolate chips and chopped Cadbury mini eggs.
  6. Drop rounded balls of dough onto the prepared baking sheets using a large cookie scoop or spoon.
  7. Bake for 13 minutes or until the edges are set and the centers are still slightly soft.
  8. After baking, let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, allow the dough to chill in the fridge for 30 minutes before baking.
Store cookies in an airtight container at room temperature for up to a week.
