Description

Say hello to Burger Bowls with Chipotle Ranch Sweet Potato Fries that’s packed with flavor! Simple to prepare, these bowls feature crispy sweet potatoes, savory beef, and a creamy chipotle ranch that brings everything together. Ideal for a quick dinner or healthy meal, this dish is sure to satisfy.


Ingredients

  • ½ cup sour cream (or plain Greek yogurt)
  • ⅓ cup mayonnaise
  • ¼ cup buttermilk
  • 2 chipotle peppers in adobo sauce
  • 1 teaspoon garlic paste
  • 2 teaspoons Sazon seasoning
  • 2 teaspoons dried parsley
  • Kosher salt & fresh ground black pepper- to taste
  • 3 medium sweet potatoes, cleaned (pat dry) & sliced into wedges
  • 3 tablespoons olive oil, divided
  • 2 ½ tablespoons Creole Cajun Seasoning– homemade or store-bought, divided
  • 1 lb ground beef
  • ½ medium yellow onion, diced
  • ⅓ cup beef broth (or water as sub)
  • For bowl assembly: Chopped romaine lettuce, halved cherry tomatoes, thinly sliced red onion, hamburger dill chips, and sliced avocado- as desired

Instructions

  1. In a blender or food processor, combine sour cream, mayonnaise, buttermilk, chipotle peppers, garlic paste, Sazon seasoning, parsley, and salt/pepper. Blend until smooth and store in the refrigerator.
  2. Preheat the oven to 425°F, and line a baking sheet with foil or parchment paper topped with a wire rack.
  3. In a large bowl, combine sweet potato wedges, 2 tablespoons olive oil, and Cajun seasoning. Toss to coat, then arrange on the prepared baking sheet.
  4. Bake at 425°F for 40 minutes or until fork-tender and crispy. Meanwhile, cook the burger meat.
  5. In a skillet over medium heat, add 1 tablespoon olive oil. Add ground beef, breaking it up as you cook until browned. Add onion and cook until translucent, about 3-4 minutes. Season with 1 ½ tablespoons Cajun seasoning, stir, then add beef broth and let simmer until absorbed.
  6. Assemble bowls with romaine lettuce, baked sweet potato wedges, beef mixture, and desired toppings. Drizzle with chipotle ranch and enjoy!

Notes

Feel free to adjust the spice level of the chipotle ranch by adding more or fewer peppers.
These bowls can be easily customized with your choice of toppings like bell peppers or corn.
Store any leftover chipotle ranch in the refrigerator for up to a week.
