Description

  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups mashed brown bananas, about 4 medium bananas
  • 1 1/3 cups buttermilk, at room temperature
  • 3/4 cup salted butter, softened
  • 3/4 cup packed light brown sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter, at room temperature
  • 4 ounces cream cheese, at room temperature
  • 2 cups confectioner’s sugar
  • 1 teaspoon pure vanilla extract
  • 2 to 3 tablespoons whole milk or heavy cream

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, combine the flour, baking soda, baking powder, ground cinnamon, and salt. Set aside.
  3. Using a stand mixer or hand mixer, cream the unsalted butter with granulated and brown sugars until smooth, about 3 minutes.
  4. Add the eggs one at a time, mix in the vanilla extract, and fold in the mashed bananas until just combined.
  5. Gradually mix the dry ingredients into the batter, alternating with the buttermilk. Be careful not to overmix.
  6. Pour the batter into the prepared baking pan and set aside.
  7. Mix softened butter, light brown sugar, flour, and ground cinnamon in a medium bowl until creamy.
  8. Dollop the cinnamon mixture over the batter and swirl with a knife to create a marble effect.
  9. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean. Monitor closely due to varying oven temperatures.

  11. For the glaze, beat butter and cream cheese until smooth. Blend in confectioner’s sugar, vanilla, and milk until smooth, adjusting milk for desired consistency.
