- 1 pound green cabbage , shredded (about 6 cups)
- 1 cup shredded carrots
- 3 tablespoons apple cider vinegar *
- 3 tablespoons granulated sugar
- 1 cup mayonnaise
- ½ teaspoon celery seed
- kosher salt and freshly-ground black pepper
Instructions
- In a mesh colander set over a large bowl, combine shredded cabbage with shredded carrots and 1 tablespoon of kosher salt. Allow to rest for 1 hour.
- After an hour, dispose of the accumulated water and dry the bowl. Rinse the cabbage and carrots, then dry thoroughly using a salad spinner or between paper towels. Return the dried mixture to the large bowl.
- In a separate bowl, mix apple cider vinegar and granulated sugar, stirring until the sugar dissolves. Add mayonnaise, celery seed, 1/4 teaspoon kosher salt, and 1/2 teaspoon black pepper, and whisk until combined.
- Pour the dressing over the cabbage and carrots, adjusting the amount based on your moisture preference. Season with additional salt and pepper if desired.
- Cover and refrigerate for at least 1 hour before serving. Stir the coleslaw before serving. It can be stored in the fridge for up to 3 days.
Notes
For extra crunch, consume the coleslaw within 1-2 days of preparation.
