- 1 cup long-grain white rice, rinsed
- 4 cups water
- 2 cinnamon sticks
- 2 cups milk, dairy or dairy-free milk
- ⅓ cup maple syrup, or other sweetener
- 1 teaspoon vanilla extract
Instructions
- In a high-powered blender, combine the rice, water, and cinnamon sticks. Blend for 40 to 60 seconds until finely ground.
- Transfer the mixture to a large container, cover, and refrigerate for 8 to 12 hours, preferably overnight.
- After chilling, strain the mixture through a nut-milk bag into a pitcher.
- Add the milk, vanilla, and maple syrup to the strained mixture. Adjust sweetness to taste by adding more sweetener as necessary.
- Pour over ice and garnish with ground cinnamon or additional cinnamon sticks before serving.
Notes
For a richer flavor, you can toast the rice in a pan until lightly browned before blending.
Use almond milk or coconut milk for a dairy-free version of this drink.
