- 2 eggs
- 1 teaspoon vanilla extract
- 1/4 cup coconut sugar
- 1/4 cup maple syrup
- 1/2 cup almond flour
- 1/3 cup cacao powder
- 1/4 tsp baking soda
- 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)
Instructions
- Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it well.
- Blend the cottage cheese until smooth, resembling a thick yogurt consistency. Set aside.
- Whisk together the eggs, vanilla extract, coconut sugar, and maple syrup in a large mixing bowl. Stir in the blended cottage cheese.
- Incorporate the almond flour, cacao powder, and baking soda. Mix until the mixture forms a smooth brownie batter.
- Fold in the chocolate chips, reserving a few for topping later if desired.
- Pour the batter into the prepared baking dish, smoothing it into an even layer. Sprinkle remaining chocolate chips on top.
- Bake for 24–26 minutes, until a toothpick inserted comes out mostly clean with moist crumbs.
- Allow the brownies to cool in the pan for 15–20 minutes before slicing.
