  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut sugar
  • 1/4 cup maple syrup
  • 1/2 cup almond flour
  • 1/3 cup cacao powder
  • 1/4 tsp baking soda
  • 1/3 cup chocolate chips (semi-sweet, dark chocolate or milk chocolate)

Instructions

  1. Preheat your oven to 350°F and prepare an 8×8-inch baking dish with parchment paper or grease it well.
  2. Blend the cottage cheese until smooth, resembling a thick yogurt consistency. Set aside.
  3. Whisk together the eggs, vanilla extract, coconut sugar, and maple syrup in a large mixing bowl. Stir in the blended cottage cheese.
  4. Incorporate the almond flour, cacao powder, and baking soda. Mix until the mixture forms a smooth brownie batter.
  5. Fold in the chocolate chips, reserving a few for topping later if desired.
  6. Pour the batter into the prepared baking dish, smoothing it into an even layer. Sprinkle remaining chocolate chips on top.
  7. Bake for 24–26 minutes, until a toothpick inserted comes out mostly clean with moist crumbs.
  8. Allow the brownies to cool in the pan for 15–20 minutes before slicing.
