  • 6 slices bacon, chopped into small pieces (preferably thick cut)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 1/2 large green cabbage, chopped into square pieces (about 8 cups)
  • 1/2 tsp cajun seasoning
  • salt, pepper, and red pepper flakes, to taste

Instructions

  • In a large skillet or Dutch oven, cook the chopped bacon over medium high heat until crispy, about 5-8 minutes. Use a slotted spoon to remove the bacon and set it aside, draining about half of the bacon drippings from the pan.
  • Lower the heat to medium, add the chopped onions, and cook until soft and translucent, about five minutes. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  • Add the chopped cabbage to the skillet along with Cajun seasoning and salt and pepper to taste. Mix everything well, then cover the pan and cook over medium low heat for 10-15 minutes, stirring occasionally.
  • Once the cabbage is tender, uncover the pan, stir in the cooked bacon, and sprinkle with red pepper flakes if desired. Serve it hot.

Notes

Thick-cut bacon works best for this recipe, providing a richer flavor and satisfying crunch.
