Instructions
- In a large mixing bowl, cream together butter and granulated sugar using a hand mixer or stand mixer on medium speed until light and fluffy, for about 2 minutes. Add the egg and vanilla, beating until well combined.
- Reduce the mixer speed to low and incorporate the baking powder and salt. Gradually mix in the flour until the dough is fully combined.
- Shape the dough into a ball and wrap it tightly in plastic wrap. Freeze for 30 minutes or refrigerate until firm, for at least 1 hour and up to overnight.
- Preheat your oven to 350°F (175°C). Line a half sheet baking pan with parchment paper or use a silicone baking mat.
- Remove the dough from the refrigerator and allow it to sit at room temperature for 5-10 minutes. On a lightly floured surface, roll out the dough to a 1/4-inch thickness. Use an egg-shaped cookie cutter to cut out shapes.
- Place the cookies on the prepared baking sheet, leaving one inch between each. Re-roll any dough scraps to cut out additional cookies.
- Bake the cookies for 8-10 minutes, until the edges are lightly golden. Allow them to cool for a few minutes on the baking sheet before transferring them to a wire rack to cool completely.
