Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the dry cake mix with melted butter and eggs, stirring until a thick dough forms.
- Gently fold in rainbow sprinkles, mixing carefully to avoid overworking the dough. It will be sticky.
- Allow the dough to rest for about 5 minutes, which helps it thicken as the cake mix absorbs moisture. It’s ready when it no longer sticks to your finger when pressed lightly.
- Use a medium cookie scoop to portion out the dough into balls.
- Roll each ball in additional sprinkles, ensuring they adhere all around.
- Place the dough balls on the baking sheet, spacing them about 3 inches apart. Bake for 10-12 minutes until the edges set and the center looks slightly underdone.
- Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack.
