Description
This elegant graduation cake features layers of yellow and chocolate cake, smooth buttercream frosting, and a delightful fondant cap. It’s perfect for any graduation celebration, easy to make, and sure to impress your guests.

- 2 Yellow sheet cakes
- 2 Chocolate sheet cakes
- 1 Cotton candy cake
- 10 cups American buttercream frosting (tinted yellow with gel food coloring)
- 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
- 1 batch Rice krispie treats (can also use store-bought)
Instructions
- Bake the yellow and chocolate cakes in 9×13 dimensions and the cotton candy dome cake in a 5-inch diameter. Reserve extra batter for cupcakes.
- Allow the cakes to cool completely after baking.
- Prepare the yellow buttercream frosting while the cakes are cooling.
- For the cap cake, place the dome cake on a matching-sized cake board, frost smoothly, and chill for 20 minutes.
- Cover the chilled dome cake with rolled black fondant and trim excess with a pizza cutter. Insert a bubble tea straw in the center.
- Create the cap's top by cutting a square cardboard piece, coloring the edges with a black edible marker, and topping with black fondant. Trim the sides as needed.
- Add a small circular piece of fondant to the center of the cardboard with corn syrup and press on a folded ribbon before attaching it to the dome cake with melted chocolate or royal icing.
- Roll rice krispie treats into a cylinder and coat them with buttercream. Wrap in white fondant, secure with circles of fondant on each end, and add a red ribbon.
- Assemble the cake by placing the chocolate cakes side by side, icing them, and stacking the yellow cakes on top, frosting the entire cake.
- Pipe yellow icing roses along the edges and top of the cake using a piping bag and star tip.
- Secure the cap and diploma using dowels or bubble tea straws, and cut out letters for 'Congratulations Class of 2024' to decorate the cake board.
Notes
Ensure cakes are completely cooled to prevent melting the frosting.
You can customize the colors of the fondant to match your graduation theme.
For easier assembly, prepare the fondant pieces in advance.
