- 2 ⅔ cups all-purpose flour
- 1 tablespoon cornstarch
- 1 ½ teaspoons baking powder
- 1 teaspoon fine sea salt
- ½ teaspoon baking soda
- 1 cup unsalted butter, room temperature
- 1 ¼ cups granulated sugar
- ¼ cup light brown sugar, firmly packed
- 1 large egg, room temperature
- 1 large egg yolk, room temperature
- 1 ½ teaspoons vanilla extract
- ½ teaspoon almond extract
- ½ cup jimmies sprinkles
- ½ cup granulated sugar for rolling the cookie dough balls
Instructions
- Whisk together flour, cornstarch, baking powder, salt, and baking soda in a medium bowl and set aside.
- In a large bowl, beat butter, granulated sugar, and brown sugar together on medium speed for 3-4 minutes until light and fluffy.
- Reduce speed to low, add egg and egg yolk, mixing until fully combined. Then add vanilla and almond extracts and mix until incorporated.
- Gradually add dry ingredients, mixing until no flour streaks remain. Fold in jimmies sprinkles until fully combined.
- Prepare a baking sheet with parchment paper. Use a scoop to place cookie dough balls onto the sheet.
- Refrigerate the cookie dough for 2 hours or overnight.
Notes
For lighter cookies, use clear vanilla extract.
Chilling the dough enhances flavor and texture.
