Description

These funfetti cookies are a delightful treat that’s both easy to make and irresistibly delicious, featuring sprinkles and rich flavors that bring joy to any event.


Ingredients

  • 2 ⅔ cups all-purpose flour
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons baking powder
  • 1 teaspoon fine sea salt
  • ½ teaspoon baking soda
  • 1 cup unsalted butter, room temperature
  • 1 ¼ cups granulated sugar
  • ¼ cup light brown sugar, firmly packed
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 1 ½ teaspoons vanilla extract
  • ½ teaspoon almond extract
  • ½ cup jimmies sprinkles
  • ½ cup granulated sugar for rolling the cookie dough balls

Instructions

  1. Whisk together flour, cornstarch, baking powder, salt, and baking soda in a medium bowl and set aside.
  2. In a large bowl, beat butter, granulated sugar, and brown sugar together on medium speed for 3-4 minutes until light and fluffy.
  3. Reduce speed to low, add egg and egg yolk, mixing until fully combined. Then add vanilla and almond extracts and mix until incorporated.
  4. Gradually add dry ingredients, mixing until no flour streaks remain. Fold in jimmies sprinkles until fully combined.
  5. Prepare a baking sheet with parchment paper. Use a scoop to place cookie dough balls onto the sheet.
  6. Refrigerate the cookie dough for 2 hours or overnight.

Notes

For lighter cookies, use clear vanilla extract.
Chilling the dough enhances flavor and texture.
