- 2 cups all purpose flour (plus more if needed)
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup butter (softened slightly)
- 3/4 cups sugar
- 1 large egg
- 3/4 teaspoons pure vanilla extract
- 1/2 teaspoon almond extract
- 16 ounces white chocolate
- 1/3 cup light corn syrup (plus more if needed)
- food coloring (flesh tone and other color for your grad caps)
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- In a bowl, mix the flour, salt, and baking powder, then set aside.
- Cream together the butter and sugar until light and fluffy.
- Incorporate the egg, vanilla, and almond extract into the creamed mixture.
- Gradually add the dry ingredients and mix until just combined.
- If the dough is sticky, sprinkle with a small amount of flour.
- Roll out the dough on a floured surface to about 1/8 inch thickness.
- Cut twelve 3-inch circles from the rolled dough.
- Cut out twelve diamond-shaped grad caps from the dough.
- Use the same diamond cutter to make a notch in each circle of dough.
- Brush two long edges of the diamond-shaped dough and insert it into the notch of the circle.
- Press the seams together with your fingers.
- Bake for 10-14 minutes until edges are set and tops are no longer wet.
- Let cookies cool completely before decorating.
- For the modeling chocolate, reserve 2 tablespoons of white chocolate to color for tassels.
- Color about 2/3 of the white chocolate with flesh tone food coloring and the rest with your chosen color for grad caps.
- Allow the colored chocolate to rest at room temperature for 30 minutes.
- Roll out the flesh tone chocolate to about 1/16 inch thickness and cut out twelve 3-inch circles.
- Roll out the colored modeling chocolate to the same thickness and cut out twelve diamond-shaped grad caps.
- Use the diamond cutter to notch each circle.
- Brush a light coating of corn syrup on each cookie.
- Press a circle and a diamond together on each cookie, ensuring the seams connect.
- Make tassels from your colored modeling chocolate by rolling into a tube and using an extruder.
- Cut pieces for the top section of the tassel and attach them to the grad caps with corn syrup.
- Pinch together strands and add them to the single strand using corn syrup to create the tassel.
Notes
Make sure to let the cookies cool completely before decorating to avoid melting the chocolate.
If the dough is too sticky, adding flour gradually will help achieve the right consistency.
Experiment with different colors for grad caps to personalize them.
