Description

  • 2 pounds carrots (about 1216 medium carrots, about 1-inch in diameter)
  • 1 1/2 tablespoons coconut oil, melted
  • 1 teaspoon cinnamon
  • 1 teaspoon chipotle paste
  • 1/2 teaspoon chili powder
  • salt, to taste
  • for topping – fresh cilantro

Instructions

  1. Preheat the grill over medium-high heat until ready.
  2. Wash and peel the carrots before seasoning.
  3. In a small bowl, combine melted coconut oil, cinnamon, chipotle paste, chili powder, and salt. Rub this mixture over the carrots thoroughly.
  4. Place the seasoned carrots on the grill over indirect heat. Grill for 20-25 minutes, flipping and rotating them every 7-8 minutes. Size determines readiness; they should be slightly soft yet firm inside when done.
  5. Serve on a platter and garnish with fresh cilantro if desired.

Notes

For extra flavor, let the carrots marinate in the oil and spices for 30 minutes before grilling.
Use a grill basket to keep smaller carrots from falling through the grates.
