- 3 medium russet potatoes peeled and 1/2-inch diced
- 1 pound lean ground beef
- 1 medium white onion diced
- 1 tablespoon vegetable oil
- 2 teaspoons minced garlic
- 1 tablespoon italian seasoning
- ½ teaspoon salt
- ½ teaspoon cracked black pepper
- 2½ cups freshly shredded sharp cheddar cheese
Instructions
- Boil cubed potatoes in salted water for 5–7 minutes until fork-tender, then drain and set aside to steam-dry.
- In a large non-stick skillet over high heat, cook the ground beef until fully browned, then drain excess fat and set aside.
- In the same skillet, heat vegetable oil over medium heat, add diced onion, par-boiled potatoes, Italian seasoning, minced garlic, salt, and pepper. Cook for 5 minutes, stirring until potatoes have golden edges and onions are translucent.
- Return the cooked beef to the skillet and mix well. Sprinkle shredded cheese over the mixture and stir until melted and gooey, binding everything together.
- Remove from heat and serve hot.
Notes
Feel free to substitute the ground beef with turkey or a plant-based alternative for a lighter version.
Adding bell peppers or mushrooms can enhance the flavor and texture of the dish.
