Description

This Irish Soda Bread is a delightful blend of flavors, featuring the richness of buttermilk and a hint of whiskey. Perfect as a quick side for dinner or a comforting snack, it’s easy to prepare and delivers a warm, homemade taste that everyone will love!


Ingredients

  • 1 ¾ cups raisins, or currants, optional*
  • ⅔ cup irish whiskey such as jameson, or apple juice or white grape juice, optional
  • 4 ¼ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • 1 ¾ cups buttermilk*
  • 2 large eggs + 2 yolks, use the extra whites for an omelette or scrambled eggs
  • 4 tablespoons unsalted butter, melted; divided
  • ¼ cup granulated sugar
  • 2 tablespoons turbinado sugar, optional (granulated sugar may be substituted)

Instructions

  • Preheat the oven to 350°F and prepare a nonstick baking sheet with cooking spray. Alternatively, preheat a cast iron skillet and grease it with butter.
  • If using raisins, soak them in whiskey or juice in a medium bowl while preparing the rest of the ingredients.
  • In a large bowl, mix the flour, baking powder, baking soda, and salt.
  • In another bowl, whisk together the buttermilk, eggs, yolks, 3 tablespoons of melted butter, and granulated sugar.
  • Combine the wet and dry ingredients without overmixing.
  • If using soaked raisins, drain them and fold into the dough gently without overmixing.
  • Transfer the dough to the baking sheet or greased skillet, shaping it into a round loaf.
  • Score the top with an X about half an inch deep using a large knife.
  • Brush with the remaining melted butter and sprinkle with turbinado sugar if desired.
  • Bake for 45 to 60 minutes until golden-browned and cooked through, ensuring to rotate midway for even baking.
  • Cool completely before slicing. Serve with butter.

Notes

Soaking the raisins enhances their sweetness and flavor.
Store bread airtight at room temperature for up to 4 days or in the freezer for up to 3 months.
For an easier cleanup, use parchment paper on the baking sheet.
