Description

These Lasagna Roll Ups are packed with flavor and are simple to make. With layers of ricotta, mozzarella, and savory ground beef, they serve as a delightful comfort food that’s perfect for a quick dinner or a family gathering.


Ingredients

  • 16 ounces lasagna noodles (cooked according to package instructions)
  • 1 teaspoon kosher salt
  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 3 garlic cloves (minced)
  • 32 ounces marinara sauce
  • 1 tablespoon dried oregano
  • 1 tablespoon dried basil
  • 1 1/2 teaspoons kosher salt (or 3/4 teaspoon table salt)
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 15 ounces ricotta cheese
  • 1 large egg (beaten)
  • 3 cups mozzarella cheese (shredded, divided)
  • 1/4 cup Parmesan cheese (shredded)
  • 2 tablespoons fresh parsley (chopped)

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 inch baking dish with cooking spray.
  2. In a large pot, bring water to a boil. Add 1 teaspoon kosher salt and the lasagna noodles, cooking according to the package instructions. Drain and set aside, remembering to cook extra for any potential breakage.
  3. In a large skillet over medium heat, add ground beef, breaking it apart. Add diced onion and minced garlic, cooking until the onion is soft, about 3 minutes. Drain excess grease.
  4. Mix in marinara sauce, oregano, basil, kosher salt, black pepper, and red pepper flakes. Simmer for 10 minutes, stirring occasionally.
  5. Meanwhile, in a bowl, combine ricotta cheese, beaten egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley.
  6. Spread 1/2 cup of the sauce in the bottom of the prepared baking dish.
  7. Lay cooked noodles on a large rimmed baking sheet. Spread about 1/4 cup of the cheese mixture on each noodle, followed by 1 tablespoon of meat sauce. Roll up each noodle and arrange them in the baking dish. You should create about 16 roll ups. Pour the remaining sauce over the roll ups and sprinkle with the remaining mozzarella cheese.
  8. Cover the baking dish with foil and bake for 30 to 35 minutes. Remove foil and broil for a few minutes to achieve a golden cheese topping.

Notes

Keep extra lasagna noodles, as they might break during handling.
Allow the dish to cool slightly before serving to help the roll ups hold their shape.
