- ½ cup sugar

- 6 large eggs (room temperature)
- 1 cup lemon juice (fresh is best, about 4 lemons)
- 2 tablespoons lemon zest
- Confectioners’ sugar for dusting
Instructions
- Preheat the oven to 350 degrees F.
- Line a 9×13 inch pan with parchment paper.
- In a medium bowl, mix together melted butter, sugar, and vanilla for the crust.
- Add 2 cups of flour to the mixture and stir until combined.
- Press the mixture firmly into the prepared pan and bake for 15-20 minutes until the edges are light brown.
- In a large bowl, combine 3 cups of sugar with 1 cup of flour and whisk to remove any lumps.
- Add the eggs, lemon zest, and fresh lemon juice, whisking until fully combined.
- Pour the lemon filling over the warm crust and bake for 30-35 minutes until the center is set and doesn't jiggle.
- Remove from the oven and let cool completely at room temperature before refrigerating.
- Dust with powdered sugar before serving.
