Description

This Mother’s Day Layer Cake is a delightful treat with vibrant colors and rich flavors. Easy to prepare with layers of fluffy cake and sweet frosting, it’s perfect for your special celebrations at home.


Ingredients

  • 2 cups granulated sugar
  • 1 ½ cups butter (softened)
  • 6 eggs
  • 1 ½ tbsp vanilla
  • 4 ½ cups all-purpose flour
  • 1 ½ tbsp baking powder
  • ¾ tsp salt
  • 2 cups whole milk
  • ½ cup butter (softened)
  • 4 cups confectioner's sugar
  • 1 tsp vanilla
  • 23 tbsp milk

Instructions

  1. Preheat the oven to 350ºF.
  2. Prepare four 9-inch round cake pans by spraying them with cooking spray and set aside.
  3. In a large mixing bowl, beat together the sugar and softened butter until the mixture is light and fluffy.
  4. Add in the eggs and vanilla, then beat again until combined.
  5. Incorporate the all-purpose flour, baking powder, and salt into the mixture and beat until smooth.
  6. Gradually pour the milk while continuously mixing until the batter is smooth.
  7. Divide the batter equally into 4 bowls.
  8. Add a different color of food coloring gel to each bowl, adjusting based on desired vibrancy.
  9. Mix the colors into the batter well.
  10. Transfer each colored batter to the prepared cake pans.
  11. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  12. Allow the cakes to cool for 15 minutes before flipping them onto parchment paper to cool completely.
  13. For the frosting, beat the softened butter and confectioner's sugar together until crumbly.
  14. Add vanilla and 2 tablespoons of milk, then beat again until well combined, adding more milk as needed for desired consistency.
  15. Assemble the cake by alternating layers of cake and frosting, finishing with a layer of frosting and sprinkles on top.

Notes

Be sure to let the cakes cool completely before frosting them to avoid melting the frosting.
Using gel food coloring will give you vibrant colors without adding too much liquid to the batter.
