Description

This Pineapple Bacon Jam combines sweet and savory flavors, featuring crispy bacon and fresh pineapple. It’s easy to make and an excellent addition to sandwiches, burgers, or as a tasty spread!


Ingredients

  • 1 pound thick-cut bacon, (diced)
  • 1 large yellow onion, (finely diced (about 1 ½ cups))
  • 3 cups (495 g) fresh pineapple, (finely diced (about ½ of a medium pineapple))
  • 2 teaspoons garlic, (minced)
  • ½ cup (100 g) light brown sugar, (packed)
  • ¼ cup (60 g) apple cider vinegar
  • ¼ cup (79 g) maple syrup
  • 1 teaspoon chili powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes, (optional)

Instructions

  1. In a medium skillet over medium heat, cook the diced bacon until crispy, stirring occasionally. Line a plate with paper towels while cooking.
  2. Transfer the cooked bacon to the lined plate using a slotted spoon, leaving about ¼ cup of bacon grease in the skillet and discarding the rest.
  3. Reduce heat to medium-low, add the diced onion to the skillet, and cook until softened and caramelized.
  4. Add finely diced pineapple to the skillet with the onion and cook until it releases its juices and begins to soften, about 10 minutes, stirring frequently.
  5. Stir in the minced garlic and cook for another 30 seconds.
  6. Incorporate the light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and red pepper flakes (if using) into the skillet, mixing well.
  7. Return the cooked bacon to the skillet and stir all ingredients together.
  8. Allow the mixture to simmer over low heat for 20 to 30 minutes, stirring occasionally, until thickened to a jam-like consistency. Continue cooking if the mixture seems too loose until most of the liquid has evaporated.
  9. Let the jam cool slightly before serving warm or refrigerating to gently reheat before use.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks.
This jam pairs wonderfully with cheese platters, burgers, or as a spread for toast.
Modify the heat level by adjusting the amount of red pepper flakes to suit your taste.
