Description

This Pineapple Coconut Mojito combines fresh mint, tropical pineapple, and creamy coconut milk for a refreshing drink. Perfect for summer gatherings or a quick backyard shake-up!


Ingredients

Scale
  • 3 mint leaves
  • 1 teaspoon brown sugar
  • ice
  • 2 ounces rum
  • 2 ounces pineapple juice
  • 1 ounce coconut milk
  • ¾ ounce lime juice
  • club soda

Instructions

  1. In a cocktail shaker, combine mint leaves and brown sugar. Press with a muddler to release the mint oils.
  2. Add ice to fill the shaker halfway, and pour in rum, pineapple juice, coconut milk, and lime juice.
  3. Cover the shaker and shake well for about 10 seconds until chilled and blended.
  4. Strain the mixture into a highball glass filled with fresh ice. Top with club soda, garnish as desired, serve, and enjoy!

Notes

For a sweeter drink, adjust the brown sugar to taste.
Feel free to garnish with additional mint leaves or lime wedges for a refreshing touch.
