Description

Ingredients

  • 2 and 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 3/4 cup granulated sugar
  • seeds scraped from 1 whole vanilla bean
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 3 cups confectioners’ sugar, sifted
  • 3 tablespoons heavy cream, at room temperature
  • 1 and 1/2 teaspoons pure vanilla extract
  • salt, to taste
  • optional: gel food coloring
  • optional: sprinkles for decorating

Instructions

  • Whisk together the flour, baking powder, and salt in a medium bowl and set aside.
  • In a large bowl, beat the butter and sugar on high speed for about 3 minutes. Add the vanilla bean seeds and mix until creamy, then add egg and vanilla extract, beating until well combined.
  • Gradually mix in the dry ingredients until just combined. If the dough is too soft, incorporate 1 more tablespoon of flour.
  • Divide the dough into two and roll each portion to about 1/4-inch thickness on floured parchment paper. Cover with another sheet of parchment and refrigerate for 1-2 hours or up to 2 days.
  • Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper. Cut shapes from the chilled dough and re-roll as necessary.
  • Arrange cookies on baking sheets, leaving 3 inches apart. Bake for 11-12 minutes until edges are lightly browned. Cool cookies on a wire rack before decorating.
  • To prepare the frosting, beat butter and vanilla bean seeds until creamy. Gradually add confectioners’ sugar, heavy cream, and vanilla extract, mixing until well combined and frosting is fluffy.
  • Decorate cooled cookies using frosting and sprinkles as desired. Store frosted cookies at room temperature for up to 1 day or refrigerated for up to 1 week. Unfrosted cookies can be stored for up to 5 days at room temperature.

Notes

You can substitute the vanilla bean seeds with vanilla extract if preferred.
The cookies can be shaped using any cookie cutter to suit the occasion.
For vibrant colors in frosting, use gel food coloring sparingly.
