  • 1 loaf Italian bread
  • 1/2 cup softened butter
  • 1 tsp garlic salt
  • 1 lb shrimp, peeled and deveined
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1 cup heavy whipping cream
  • 1 cup Parmesan cheese, grated
  • 1/2 tsp crushed red pepper flakes
  • 1 cup mozzarella cheese, shredded
  • 1 cup white cheddar cheese, shredded
  • 2 tbsp chopped parsley

Instructions

  1. Preheat oven to 400°F and line a large baking sheet with parchment paper.
  2. Place the Italian bread cut side up on the prepared baking sheet. Spread the softened butter evenly over both halves and sprinkle with garlic salt.
  3. Bake for 8 to 10 minutes or until lightly golden and crisp around the edges. Remove from the oven and set aside.
  4. Pat the shrimp dry with paper towels and season with kosher salt and black pepper.
  5. In a large skillet over medium-high heat, heat the olive oil until shimmering. Add the shrimp in a single layer and cook for 1 to 2 minutes per side until golden and opaque, ensuring they remain slightly translucent in the center. Transfer the shrimp to a plate, allowing them to finish cooking in the oven.
  6. In a saucepan over medium heat, melt the butter and cook the diced onion until softened, about 3 to 4 minutes. Stir in garlic and cook for about 30 seconds.
  7. Pour in heavy whipping cream and bring to a gentle simmer without boiling.
  8. Stir in Parmesan cheese, kosher salt, black pepper, and crushed red pepper flakes. Continue stirring until the cheese melts and the sauce thickens slightly, about 3 to 5 minutes, then remove from heat.
  9. Spoon about ¾ cup of Alfredo sauce over each toasted bread half, spreading evenly to the edges. Reserve the remaining sauce for serving.
  10. Evenly arrange the shrimp over both halves of bread and sprinkle mozzarella and white cheddar cheese on top.
  11. Return the bread to the oven and bake for another 8 to 10 minutes until the cheese is melted and bubbly. Optionally, broil for 1 to 2 minutes for a golden top, watching closely.
  12. Remove from the oven and let rest for 2 to 3 minutes before garnishing with chopped parsley. Slice and serve warm with the reserved Alfredo sauce on the side for dipping.
