Description

Enjoy a delightful blend of flavors in this Slow Cooker Reuben Dip. Creamy, cheesy, and loaded with corned beef and sauerkraut, it’s perfect for quick dinners and gatherings!


Ingredients

  • 16 oz. cream cheese, softened (two 8-oz. pkgs.)
  • 1 lb deli sliced corned beef or pastrami, roughly chopped
  • 2 cups swiss cheese, shredded
  • 1 cup sauerkraut, drained
  • 1 cup sour cream
  • ¾ cup thousand island dressing
  • rye bread
  • rye chips and crackers
  • French bread
  • veggies

Instructions

  1. In a large bowl, combine all the ingredients and mix until well combined.
  2. Transfer the corned beef mixture to a 4 quart or larger slow cooker bowl.
  3. Cook on LOW heat for 2 hours or until the cheese has melted and the dip is hot and bubbling.
  4. Garnish with sliced green onion or parsley if desired. Serve with rye chips, crackers or bread. Enjoy!
