Ingredients

  • 1 cup all-purpose flour, or substitute 1:1 gf flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 5 eggs, (large)
  • 1 cup sugar, divided into 3/4 and 1/4 cups
  • 1 tsp vanilla extract
  • 1/3 cup whole milk
  • 12 oz evaporated milk
  • 9 oz sweetened condensed milk
  • 1/3 cup heavy whipping cream
  • 2 cups heavy whipping cream
  • 2 tbsp granulated sugar
  • 1 cup berries, to garnish, optional

Instructions

  1. Preheat the oven to 350 °F and grease a 9×13 casserole pan. Prepare three mixing bowls.
  2. In a large bowl, sift together the flour, baking powder, and salt. Separate the eggs, placing the whites in one bowl and the yolks in another.
  3. Beat the egg yolks with 3/4 cup sugar on high speed until pale yellow (about 2 minutes). Mix in the milk and vanilla extract.
  4. Whip the egg whites on high speed until soft peaks appear (around 1 minute). Gradually add the remaining 1/4 cup sugar while continuing to beat until stiff peaks form (about 1 minute).
  5. Combine the egg yolk mixture with the flour mixture gently using a spatula. Gradually fold in the beaten egg whites until just combined. Pour the batter into the prepared pan and smooth the surface.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Notes

Ensure eggs are at room temperature for better emulsification.
For an extra touch, consider garnishing with berries before serving.
Let the cake cool completely before soaking with milk mixture.
