Description

Enjoy Air Fryer Greek Roasted Potatoes, bursting with flavors from yukon gold potatoes, Greek dressing, and spices. A quick and flavorful side for any meal!


Ingredients

  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of
  • Fresh minced parsley for garnish

Instructions

  1. Chop the potatoes into halves, quartering any large ones, and soak them in cold water for 30 minutes.
  2. Drain and rinse the potatoes with fresh water.
  3. Thoroughly dry the potatoes, then mix them in a bowl with salad dressing and seasoning, tossing to coat evenly.
  4. Spray the air fryer basket with non-stick spray, add potatoes, and air fry at 400°F for 20 minutes, shaking the basket every 5 minutes.
  5. Adjust seasoning if necessary, then garnishing with fresh parsley and squeezing lemon juice over before serving.

Notes

Soaking the potatoes helps achieve a better texture.
Adjust the amount of Greek seasoning based on your taste preference.
For extra crispiness, increase air frying time by a few minutes.
