Description

This Apple Blueberry Pie with Flaky Lattice Crust features a delightful blend of Granny Smith and Honeycrisp apples, along with juicy blueberries. Its simple preparation and mouthwatering flavor make it a perfect dessert for family gatherings or everyday treats.

Ingredients

Scale
  • 2 Pie crusts homemade or store-bought for a double-crust pie
  • 2 medium Granny Smith apples peeled, cored, and thinly sliced
  • 2 medium Honeycrisp apples peeled, cored, and thinly sliced
  • 2 cups fresh blueberries or frozen, unthawed
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar packed
  • 1/4 cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter cut into small cubes
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • Coarse sugar for sprinkling optional

Instructions

  1. Preheat the oven to 400°F (200°C) and place a baking sheet on the lowest rack.
  2. Roll out one pie crust and fit it into a 9-inch pie dish, leaving 1 inch of dough hanging over. Trim excess, fold edges under, and crimp decoratively.
  3. In a large bowl, mix sliced apples, blueberries, granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, cinnamon, nutmeg, and salt until evenly coated.
  4. Spoon the fruit mixture into the prepared crust, mounding slightly in the center. Dot the filling with butter cubes.
  5. Roll out the second crust, cover the filling, trim excess dough, crimp edges to seal, and cut slits in the top for steam to escape. For a lattice effect, use strips of dough woven over the filling.
  6. Brush the top with egg wash and sprinkle with coarse sugar, if desired.
  7. Bake at 400°F for 20 minutes. Reduce to 375°F (190°C) and continue baking for 30-40 minutes until golden brown and bubbling. Cover edges with foil if browning too quickly.
  8. Remove from the oven and cool on a wire rack for at least 2 hours to set the filling before slicing.

Notes

Allow the pie to cool completely to ensure the filling sets properly before cutting.
For added flavor, consider mixing in some fresh or frozen raspberries with the blueberries.
Use a mix of different apple varieties for a more complex taste.
