Description

Ingredients

  • 3 ½ cups (420g) all purpose flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • ½ tsp ground nutmeg
  • 1 cup (198g) granulated sugar
  • 1 cup (213g) brown sugar
  • ¾ cup (149g) vegetable oil
  • 1 cup (255g) applesauce, sweetened or unsweetened
  • 3 large eggs
  • 2 tsp vanilla extract
  • 2 ½3 cups diced apples, cut into ¼-inch chunks
  • ½ cup (107g) brown sugar
  • ¼ cup (57g) unsalted butter
  • 2 tbsp milk
  • ⅔ cup (76g) powdered sugar, sifted

Instructions

  1. Preheat your oven to 350°F and generously grease a 10 to 12 cup bundt pan with butter and flour.
  2. Peel, core, and dice the apples into ¼ inch chunks. You'll need about 2.5-3 cups total.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set this mixture aside.
  4. In a large bowl, combine granulated sugar, brown sugar, vegetable oil, applesauce, eggs, and vanilla extract, whisking until well blended.
  5. Mix half of the dry ingredients into the wet ingredients until just combined.
  6. Add the rest of the dry mixture along with the diced apples, and mix until just combined.
  7. Pour the batter into the prepared bundt pan and smooth the top with a spatula.
  8. Bake for 60 minutes. If browning too quickly, loosely cover with aluminum foil and continue baking for another 10-20 minutes until a toothpick comes out clean.
  9. Let the cake cool in the pan for 15-20 minutes before inverting it onto a wire rack to cool completely.

Notes

Ensure you grease the bundt pan well to prevent sticking.
Feel free to sprinkle some nuts or extra cinnamon on top before baking for added flavor and texture.
