Description

Ingredients

  • 4 cups (500 g) all-purpose flour
  • 3 cups (600 g) granulated sugar
  • 4 teaspoons baking powder
  • 4 teaspoons apple pie spice
  • 1 teaspoon kosher salt
  • 2 ½ cups apple cider
  • 2 large eggs, room temperature
  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • 2 tablespoons vanilla extract
  • ¼ cup apple cider
  • ½ cup (100 g) granulated sugar
  • 2 teaspoons apple pie spice

Instructions

  1. Preheat your oven to 350°F and grease a 10 to 12 cup Bundt pan with baking spray or a mix of butter and flour.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, apple pie spice, and kosher salt.
  3. In another bowl, combine the apple cider, eggs, melted butter, and vanilla extract, whisking until well mixed.
  4. Pour the wet mixture into the dry ingredients and stir gently just until combined; do not overmix.
  5. Carefully pour the batter into the prepared Bundt pan, smoothing the top if needed.
  6. Bake for 50 to 65 minutes, checking with a toothpick starting at 50 minutes; it should come out with a few moist crumbs.
  7. Allow the cake to cool in the pan for 10 to 15 minutes, then invert it onto a wire rack.
  8. While the cake is warm, brush or drizzle ¼ cup of apple cider over it.
  9. In a small bowl, combine the remaining sugar and apple pie spice. Sprinkle this mixture over the warm cake and press gently to adhere until well coated.
  10. Let the cake cool completely before slicing.

Notes

Ensure the eggs are at room temperature for better mixing.
Variation: Substitute apple juice if apple cider is unavailable.
For an extra treat, add walnuts or pecans to the batter for added crunch.
