- 1 cup peeled cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter melted
- ¾ cups dark brown sugar packed
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- In a frying pan over medium heat, add the prepared apples, brown sugar, and cinnamon. Cook for about 5 minutes until the apples soften, then transfer them to a plate to cool.
- Preheat the oven to 350°F and grease an 8×8” pan, laying parchment paper with overhangs for easy removal.
- In a large bowl, whisk the flour, baking powder, kosher salt, cinnamon, and nutmeg together.
- In another bowl, whisk the melted butter, brown sugar, egg, and vanilla until smooth.
- Combine the wet ingredients with the dry ingredients, folding with a rubber spatula until most flour is mixed in. Gently fold in the cooled apples and any juices.
- Spread the batter evenly in the prepared pan and bake for 18-22 minutes until the top is lightly browned. Avoid overbaking.
- Allow to cool on a wire rack completely before adding icing.
Notes
These blondies can be stored in an airtight container for up to 5 days.
For added flavor, consider mixing in nuts or additional spices based on personal preference.
Ensure the apples are finely chopped to distribute evenly in the batter.
