- 3 apples, peeled & diced
- 2 tbsp sugar
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 1 tbsp butter
- 1–2 tbsp water
- 1 cup powdered sugar
- 1–2 tbsp apple juice
- 1/4 tsp vanilla
- 2 (16 oz) cans pillsbury grands buttermilk biscuits
- 1 cup sugar
- 2 tbsp cinnamon
- 1 cup brown sugar
- 1/2 cup butter, melted
Instructions
- Preheat your oven to 325°F and generously coat a Bundt pan with non-stick spray.
- Peel, core, and dice the apples. Toss them with sugar, cinnamon, and lemon juice.
- In a skillet over medium heat, melt the butter. Add the apples and cook for 8-10 minutes until tender. If they brown too quickly, add 1 tbsp water as needed. Allow to cool slightly.
- Place half of the caramelized apples in the bottom of the prepared pan.
- Cut each biscuit into quarters and set aside.
- In a Ziplock bag, combine sugar and cinnamon. Add half the quartered biscuits and shake to coat.
- Distribute the coated biscuits evenly in the pan over the apples.
- Layer the remaining caramelized apples on top of the biscuits.
- Coat the other half of the quartered biscuits in the sugar mixture and place them in the pan.
- In a small saucepan over low heat, combine brown sugar and melted butter, stirring until well mixed. Pour this mixture evenly over the biscuits.
- Bake for about 30 minutes or until golden brown.
- Let it cool for a few minutes before inverting onto a dinner plate.
- Prepare the icing by whisking together powdered sugar, apple juice, and vanilla, then drizzle over the cooled monkey bread.
Notes
For a richer flavor, you can add maple syrup to the icing.
Make sure to coat the Bundt pan well to avoid sticking.
This dish is great served warm with a scoop of vanilla ice cream.
