Ingredients

  • ½ cup chopped apple, about 1/2 a large apple
  • 1 teaspoon maple syrup
  • pinch of cinnamon
  • ½ cup old fashioned oats
  • ½¾ cup unsweetened almond milk
  • ¼ cup plain greek yogurt or coconut yogurt
  • 2 teaspoons maple syrup, honey or your favorite sweetener
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon, or apple pie spice
  • Toppings: cinnamon apples, nut butter, chopped nuts, chia or hemp seeds

Instructions

  1. In a microwave-safe bowl, combine chopped apple, maple syrup, and a pinch of cinnamon. Stir until apples are coated.
  2. Microwave for 30 to 60 seconds until softened, allowing cooling time. Reserve 1/4 cup of the mixed apples for topping later.
  3. In a dish with a lid, combine the oats, almond milk, yogurt, 2 teaspoons of sweetener, vanilla, and ½ teaspoon of cinnamon.
  4. Stir in 1/4 cup of the softened apple mixture. Secure the lid and shake the jar to mix well.
  5. Refrigerate overnight or at least 30-60 minutes if preparing in the morning.
  6. Before serving, remove the lid, adjusting the consistency with extra yogurt or milk as needed, and top with the reserved apples and your desired toppings.

Notes

Adjust the sweetness to your preference by adding more maple syrup or honey.
Experiment with different toppings like chia seeds or nut butter for extra flavor and nutrition.
This recipe can be made in bulk for meal prep throughout the week.
