Description

This Avocado Dressing is creamy and bursting with flavor, made from fresh avocado, zesty lemon, and aromatic herbs. It’s an easy addition to salads or as a dip, making it perfect for any meal. Enjoy a homemade dressing that elevates your dishes effortlessly!


Ingredients

  • 1 ripe avocado
  • 1/4 cup white wine vinegar
  • 1 lemon – juice only
  • 1 garlic clove
  • 3/4 cup avocado oil
  • 2 tbsp agave nectar
  • 2 tbsp cilantro (or basil, or parsley)
  • coarse kosher salt to taste

Instructions

  1. Prepare a blender or food processor with an opening on top for adding ingredients while blending without stopping.
  2. Slice the avocado in half, remove the pit, peel the skin, and add the avocado flesh to the blender or food processor.
  3. Add the white wine vinegar, lemon juice, agave nectar, garlic, cilantro, and salt to the blender (do not add the oil yet).
  4. Close the lid and begin blending; slowly drizzle in the avocado oil while the blender is running. Once the oil is fully incorporated, blend for a few more seconds.
  5. Check the consistency and flavor; if a thinner dressing is desired, blend in an additional 1/4 cup of avocado oil.

Notes

Adjust the amount of salt based on your preference for seasoning.
Feel free to substitute cilantro with basil or parsley for different flavor variations.
This dressing can be stored in the refrigerator for up to a week.
