- 2 bananas sliced, plus more for topping

Instructions
- In a medium saucepan off heat, combine the sugar, cornstarch, and salt. Whisk in the beaten egg yolks and milk.
- Place the saucepan over medium heat, stirring consistently until boiling and thickened, about 10 minutes. Let boil for 1 minute once it starts bubbling, until it coats the back of a spoon.
- Remove from heat and stir in the butter and vanilla until smooth.
- Layer the sliced bananas in the baked pie crust. Pour the pudding mixture over the bananas. You may not use all of the pudding depending on banana size. Refrigerate the pie for 4 hours to cool.
