Description

These Beef Tips are a quick and hearty meal featuring tender beef chunks simmered in flavorful broth. Perfect for cozy dinners, they’re easy to prepare with minimal ingredients.


Ingredients

  • 2 pounds beef chuck roast cubed or stew meat
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 yellow onion chopped
  • 1 (10.5 ounce) can beef broth
  • 1 (10.5 ounce) can condensed french onion soup or condensed onion soup
  • 1 tablespoon worcestershire sauce
  • 1 bay leaf
  • chopped fresh parsley for garnish, optional
  • 3 tablespoons cornstarch
  • ⅓ cup water

Instructions

  1. Trim any excess fat from the beef and toss it with salt and black pepper.
  2. In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned beef in small batches and cook until browned. Transfer the beef to a bowl and set aside.
  3. Reduce the heat to medium, add the remaining olive oil, and add the chopped onion. Cook until softened, about 5 to 7 minutes.
  4. Return the browned beef to the pot along with the beef broth, condensed onion soup, Worcestershire sauce, and bay leaf. Bring to a boil, cover, and reduce the heat to a simmer. Cook for 1½ to 2 hours or until the beef is fork-tender.
  5. To thicken the gravy, mix cornstarch with ⅓ cup of cold water. Gradually pour this mixture into the beef mixture while stirring until the gravy reaches the desired thickness.
  6. Taste and adjust seasoning with additional salt and pepper if needed. Discard the bay leaf and serve the beef tips hot over mashed potatoes.

Notes

For added flavor, sear the beef well to develop a rich crust.
Serve with crusty bread to soak up the delicious gravy.
Garnish with fresh parsley for a touch of color.
