Description

The Blueberry Breakfast Quesadilla is a delightful twist on traditional breakfast options. It’s packed with cream cheese and fresh blueberries, making it both flavorful and satisfying. With a simple prep process, this dish is ideal for an easy morning meal that your whole family will love.


Ingredients

  • 1 burrito size flour tortilla
  • 2 tbsp cinnamon cream cheese
  • 1/3 cup fresh blueberries
  • 1 tbsp butter, softened
  • cinnamon & sugar, optional

Instructions

  1. Spread cream cheese on one side of the flour tortilla.
  2. Sprinkle blueberries over half of the tortilla. Fold the other side over and press down lightly.
  3. Spread 1/2 tbsp softened butter on one side of the quesadilla, then flip it and spread the remaining 1/2 tbsp butter on the other side. If desired, generously sprinkle cinnamon and sugar over the buttered sides.
  4. Place the quesadilla on a skillet over medium heat and grill each side until golden brown.

Notes

Feel free to add more blueberries for a fruitier flavor.
Serve with maple syrup for an extra sweet touch.
Can be made ahead and reheated for a quick breakfast.
