These Blueberry Cheesecake Protein Popsicles deliver an irresistible flavor with simple prep. Made from fresh blueberries and cottage cheese, they’re a delightful healthy treat perfect for summer.

- ¾ cup fresh blueberries
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine the blueberries, maple syrup, and lemon juice. Bring to a boil, then reduce heat to low and simmer for about 10 minutes until the blueberries reduce by half.
- Remove the saucepan from heat and allow the mixture to cool for 10 minutes.
- In a blender, combine the cottage cheese, 3 tablespoons of maple syrup, cornstarch, and vanilla bean paste. Blend until smooth.
- Layer the cottage cheese mixture and blueberry sauce in popsicle molds, alternating between the two.
- Top the mixture with crushed graham cracker pieces.
- Freeze the molds overnight or for at least 5 hours.
Notes
For a sweeter taste, adjust the amount of maple syrup to your liking.
You can use frozen blueberries if fresh ones are not available.
Make sure to blend the cottage cheese well for a creamy texture.
