- 1 1/2 cups salted butter, softened
- 1 cup sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 3 cups all-purpose flour
- 1/4 cup sugar
- 1 teaspoon cornstarch
- 4 cups fresh blueberries
- 1 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
- In a large bowl or stand mixer, combine the butter, sugar, vanilla, and salt.
- Scrape down the sides of the bowl, then stir in the flour.
- Press about 2/3 of the mixture into the prepared pan and bake for 15 minutes.
- In a bowl, combine the sugar and cornstarch. Add the blueberries and stir to mix evenly.
- Spoon the blueberry mixture over the bottom crust and spread evenly.
- Top with the remaining crumb mixture.
- Bake for an additional 30-35 minutes or until golden brown and bubbly.
- To make the icing (optional), whisk together the powdered sugar and milk, adding more milk as necessary for drizzling consistency.
- Drizzle the icing over the cooled bars and enjoy.
Notes
Make sure to use softened butter for easier mixing.
Feel free to add a squeeze of lemon juice to the blueberry mixture for an extra flavor boost.
Store leftover bars in an airtight container at room temperature for up to five days.
