Description

These Blueberry Crumble Bars are a delightful treat featuring a buttery crumble topping and juicy fresh blueberries. Perfect for snack time or dessert, they are easy to make and utterly satisfying. Ideal for gatherings or a comforting homemade snack!


Ingredients

  • 1 1/2 cups salted butter, softened
  • 1 cup sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon cornstarch
  • 4 cups fresh blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350℉ and line a 9×13 inch pan with parchment paper.
  2. In a large bowl or stand mixer, combine the butter, sugar, vanilla, and salt.
  3. Scrape down the sides of the bowl, then stir in the flour.
  4. Press about 2/3 of the mixture into the prepared pan and bake for 15 minutes.
  5. In a bowl, combine the sugar and cornstarch. Add the blueberries and stir to mix evenly.
  6. Spoon the blueberry mixture over the bottom crust and spread evenly.
  7. Top with the remaining crumb mixture.
  8. Bake for an additional 30-35 minutes or until golden brown and bubbly.
  9. To make the icing (optional), whisk together the powdered sugar and milk, adding more milk as necessary for drizzling consistency.
  10. Drizzle the icing over the cooled bars and enjoy.

Notes

Make sure to use softened butter for easier mixing.
Feel free to add a squeeze of lemon juice to the blueberry mixture for an extra flavor boost.
Store leftover bars in an airtight container at room temperature for up to five days.
