- 3/4 cup butter, softened
- 2/3 cup sugar
- 2/3 cup brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/3 cups flour
- 1 1/3 cups quick oats
- 1 (8 oz) cream cheese, softened
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1 egg yolk
- 1 cup blueberries
Instructions
- Preheat the oven to 350 degrees. Spray a 9 x 13 pan with non-stick spray and set aside.
- In a mixing bowl, combine the softened butter, sugar, and brown sugar. Then, mix in the baking soda, salt, flour, and quick oats.
- Press half of the mixture evenly into the bottom of the prepared pan. Bake for 13 minutes.
- While the bottom layer is baking, prepare the filling.
- In another mixing bowl, combine the softened cream cheese and sweetened condensed milk until smooth, then add in the vanilla and egg yolk.
- Once the bottom layer finishes baking, remove it from the oven and spread the cream cheese mixture evenly on top.
- Sprinkle the blueberries over the cream cheese layer.
- Top with the remaining crumble mixture, pressing down lightly.
- Bake for an additional 20-25 minutes, or until the edges are golden brown.
- Allow to cool completely before cutting.
Notes
Using fresh blueberries will give the best flavor to the bars.
Ensure cream cheese is softened for easier mixing.
These bars can be served chilled for a refreshing dessert.
