- 2 cups all purpose flour
- 1 cup unsalted butter, room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest
- 1 cup fresh blueberries
Instructions
- In a medium bowl, mix together the flour, salt, and powdered sugar. Cut in the butter with a fork or pastry blender until the mixture is crumbly.
- Grease a 9×13 inch baking pan with cooking spray or butter. Firmly press the crust mixture into the prepared pan.
- Bake at 350°F for 18-20 minutes until golden brown. Remove from the oven and let cool.
- In another bowl, whisk the eggs, then add the sugar and flour, whisking until combined. Stir in the lemon juice and zest (if using). Pour over the crust and sprinkle the blueberries evenly on top.
- Bake for an additional 20-25 minutes, or until the top is lightly golden. Remove from oven and cool slightly on a wire rack.
- Once cool, transfer to the refrigerator for at least 2 hours to set completely. Dust with powdered sugar and cut into bars.
Notes
Ensure the butter is at room temperature for easier mixing.
For a stronger lemon flavor, add more zest according to taste.
