  • ½ cup salted butter
  • 2 large eggs
  • ¾ cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • ¾ cup all-purpose flour
  • 1 tablespoon unsweetened cocoa powder
  • ¼ teaspoon fine sea salt
  • ¾ cup creamy peanut butter
  • ¼ cup salted butter (softened)
  • ½ teaspoon pure vanilla extract
  • ¼ teaspoon fine sea salt
  • 1 ½ cups powdered sugar
  • 12 tablespoons whole milk (room temperature)
  • ½ cup heavy cream
  • 1 cup semisweet chocolate (6 ounces)

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Line a 9×9-inch baking dish with parchment paper and lightly grease it.
  3. Melt 6 oz of semisweet chocolate and ½ cup salted butter together in a saucepan or microwave, stirring until smooth.
  4. In a mixing bowl, whisk together 2 large eggs, ¾ cup granulated sugar, and 2 teaspoons vanilla extract until well combined.
  5. Mix the melted chocolate mixture into the egg mixture until smooth.
  6. In another bowl, combine ¾ cup all-purpose flour, 1 tablespoon cocoa powder, and ¼ teaspoon fine sea salt. Gradually fold this dry mixture into the wet mixture until just combined.
  7. Pour the batter into the prepared baking dish and bake for 20-25 minutes until a toothpick comes out clean.
  8. Let the brownies cool completely in the pan before making the peanut butter filling.
  9. For the filling, beat together ¾ cup creamy peanut butter, ¼ cup softened salted butter, ½ teaspoon vanilla extract, and ¼ teaspoon fine sea salt until smooth.
  10. Gradually add in 1 ½ cups powdered sugar and 1-2 tablespoons of milk until you reach a creamy consistency.
  11. Spread the peanut butter filling evenly over the cooled brownies.
  12. To make the chocolate ganache, heat ½ cup heavy cream until it just starts to simmer, remove from heat, and stir in 1 cup of semisweet chocolate until melted and smooth.
  13. Pour the ganache over the peanut butter layer and spread evenly. Allow to set before cutting into squares.
