Description

Ingredients

  • 1 boxed spice cake mix, 15.25 oz.
  • 3 large eggs, room temperature
  • ¼ cup vegetable or canola oil
  • 2 tbsp whole milk
  • 1 ½ tsp pumpkin spice
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp orange zest, optional
  • 4 oz block cream cheese, softened
  • 3 tbsp butter
  • 1 tsp vanilla extract
  • ¼ cup light brown sugar
  • pinch of sea salt
  • 1½ to 2 cups powdered sugar, more if needed

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk the eggs until frothy.
  3. Mix in the oil, pumpkin purée, vanilla extract, and milk. Blend until well combined.
  4. Stir in the cake mix, pumpkin spice, cinnamon, and optional orange zest until just incorporated—do not overmix.
  5. Grease and flour a loaf pan and pour the bread mixture in, spreading it evenly.
  6. Bake for 50-60 minutes, or until a toothpick inserted comes out clean. Tent loosely with aluminum foil if the top browns too quickly.
  7. Cool the loaf in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the cream cheese and butter until smooth. Add vanilla extract and brown sugar, mixing until smooth.
  9. Gradually incorporate the powdered sugar until reaching the desired consistency. Chill until ready to use.
  10. Once the bread is fully cooled, frost it generously with the cream cheese frosting. Chill again for about 2 hours before slicing.

Notes

Ensure the eggs are at room temperature for better mixing.
For added flavor, feel free to experiment with spices like nutmeg or ginger in the batter.
The bread can be frozen for up to three months—just frost before serving.
