Description

These Cherry Hand Pies are a delightful treat made with fresh cherries and puff pastry. Easy to make and incredibly flavorful, they’re perfect for a quick dessert.


Ingredients

  • 5 ounces fresh cherries
  • 2 tablespoons brown sugar
  • 1/2 teaspoon almond extract
  • 1 teaspoon lemon juice
  • 2 tablespoons cornstarch
  • 1 sheet of frozen puff pastry (1/2 of a box), defrosted
  • 1 large egg yolk
  • 2 teaspoons heavy cream
  • granulated sugar for sprinkling on top

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Pit the cherries and place in a bowl. Add the brown sugar, almond extract, lemon juice, and cornstarch. Stir to combine and set aside.
  3. Flour the counter and unfold the pastry sheet. Roll it out to be about 1/2" larger on all sides. Cut out 2 circles using a 6" round cutter and place them on a parchment-lined baking sheet.
  4. Divide the cherry filling evenly on one side of each dough circle, about 1/2" from the edge.
  5. Beat the egg yolk with the heavy cream and brush the mixture on the edges of the circles. Fold the dough over to seal and crimp the edges. Cut 3 slits in the top of each pie and sprinkle with sugar.
  6. Bake for 18-21 minutes, or until golden and puffy.
  7. Let cool for 10 minutes before serving.

Notes

You can add a dash of cinnamon for extra flavor.
Serve the hand pies warm for the best experience.
These can be made ahead and frozen for later baking.
