Ingredients You’ll Need

  • 1 tablespoon garam masala: This blend of spices is fragrant and gives authentic Indian flavor. Feel free to use homemade if you have it!
  • 1 tablespoon ground cumin: Adds earthiness and depth; toasted cumin can enhance its flavor.
  • 1 tablespoon ground coriander: Provides a citrusy undertone that balances the spices.
  • 2 teaspoons ground turmeric: Known for its anti-inflammatory properties, it imparts a lovely golden hue.
  • 2 teaspoons kosher salt: Essential for seasoning the chicken and enhancing all flavors.
  • 1 teaspoon smoked paprika: Adds a subtle smokiness; you could swap it with sweet paprika if preferred.
  • 1/2 teaspoon cayenne pepper: For a touch of heat; adjust according to your spice tolerance.
  • 2 pounds boneless, skinless chicken breasts or thighs, cut into cubes: Thighs tend to be juicier, but either option works well.
  • 1 cup plain, full-fat yogurt: Helps tenderize the chicken and adds creaminess to the marinade.
  • 6 cloves garlic, grated, divided: Fresh garlic imparts robust flavor; use more if you love garlic!
  • 1 tablespoon freshly grated ginger, divided: Adds a wonderful freshness and warmth to the dish.
  • 2 tablespoons oil: For cooking; use vegetable or canola oil for high smoke points.
  • 1 tablespoon butter: Adds richness to the dish; feel free to substitute with vegan butter if desired.
  • 1 medium onion, finely diced: Sautéed until golden, it builds the flavor base of the sauce.
  • 1 can (15 ounces) canned tomato sauce or crushed tomatoes: Provides acidity and sweetness, balancing the spices beautifully.
  • 1 cup coconut milk or heavy cream: Offers creaminess; coconut milk makes it dairy-free, while heavy cream enriches the sauce.
  • Fresh cilantro, chopped, to serve: A sprinkle of cilantro brightens the dish and adds freshness.
  • 4 cups basmati rice, to serve: The perfect base for soaking up the delicious sauce—don’t skip this!
  • Homemade garlic naan, to serve: Ideal for scooping up every last bite of the flavorful sauce.

How to Make Chicken Tikka Masala | Easy One-Pan Creamy Comfort Dinner

  1. Whisk Together the Spices: In a small bowl, combine 1 tablespoon garam masala, 1 tablespoon ground cumin, 1 tablespoon ground coriander, 2 teaspoons turmeric, 2 teaspoons kosher salt, 1 teaspoon smoked paprika, and 1/2 teaspoon cayenne pepper. Set aside for later use.
  2. Prepare the Marinade: In a large bowl, mix 2 pounds cubed chicken with 1 cup plain yogurt, half of the grated garlic (3 cloves), half of the grated ginger (1/2 tablespoon), and half of the spice mixture. Stir well to coat the chicken, cover, and let marinate for at least 15 minutes, or overnight in the fridge for deeper flavor.
  3. Brown the Chicken: In a large, heavy-bottomed pot or high-walled pan, heat 2 tablespoons of oil and 1 tablespoon of butter over medium-high heat. Remove the marinated chicken from the bowl, letting excess marinade drip off, and add the chicken to the pot in batches. Cook until browned and beginning to char, about 2-3 minutes per side—total cooking time should be around 6 minutes. Remove the browned chicken from the pot and set aside.
  4. Sauté the Aromatics: Add 1 finely diced onion and the remaining grated garlic (3 cloves), ginger (1/2 tablespoon), and leftover spices to the same pot. Cook, stirring occasionally, until the onion softens, about 4 minutes.
  5. Build the Sauce: Pour in 1 can (15 ounces) of crushed tomatoes, scraping the bottom to release all the brown bits that bring great flavor. Let this simmer and thicken for another 2 minutes.
  6. Combine & Simmer: Mix in 1 cup of coconut milk or heavy cream, and stir until combined. Add the cooked chicken back into the pot. Reduce heat to low and let the mixture simmer for 10 minutes, stirring occasionally until the chicken is cooked through and the sauce thickens to your liking.
  7. Serve: Garnish with chopped cilantro and serve hot over basmati rice with garlic naan on the side to soak up all that delicious, creamy sauce.

Storing & Reheating

Chicken Tikka Masala can be kept at room temperature for about 2 hours. For longer storage, place leftovers in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to 3 months. Just remember to let it cool completely before transferring to the freezer. When you’re ready to enjoy it again, thaw overnight in the fridge and reheat gently on the stovetop over medium heat until warmed through. The creamy texture may change slightly, so a splash of additional coconut milk or cream can help refresh it.

Chef’s Helpful Tips

  • Always marinate your chicken for maximum tenderness and flavor; overnight is best if you have the time.
  • Make sure your oil is hot before adding the chicken for that beautiful browning effect—it enhances the flavor!
  • Keep an eye on the sauce while it simmers; if it thickens too much, a splash of water or stock can help thin it out.
  • Adjust the spice levels according to your palate. If you like it hotter, increase the cayenne pepper or add some diced green chilies.
  • This dish is incredibly versatile; feel free to add vegetables like bell peppers or spinach for additional nutrition.

There’s so much comfort packed in this dish, inviting you after a long day. Whether it’s a family dinner, a weekend gathering, or just a cozy night in, Chicken Tikka Masala is a fantastic choice that never disappoints. Experiment with the spices, and don’t hesitate to make it your own.

Can I use other cuts of chicken?

Absolutely! While boneless, skinless chicken breasts or thighs are perfect, you can also use chicken legs or even cut-up whole chickens for a more flavorful dish. Just adjust the cooking time as needed.
