- 2 cups zucchini, shredded
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 2 eggs
- 1 tbsp vanilla
- 1 tsp cinnamon
- 1 3/4 cups flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 (11 oz) bag chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- Spray a 9 x 13 pan with non-stick spray and set aside.
- Grate enough zucchini to equal 2 cups (approximately 2 zucchini).
- In a large bowl, cream together the softened butter, brown sugar, eggs, and vanilla until smooth.
- Add cinnamon, flour, salt, and baking powder to the mixture until well combined.
- Fold in the shredded zucchini and chocolate chips gently.
- Spread the mixture evenly into the prepared pan.
- Bake for 30-35 minutes until golden brown.
- Press additional chocolate chips into the top of the bars after removing from the oven.
Notes
Feel free to substitute with other types of chocolate if desired.
Ensure the zucchini is well-drained to avoid excess moisture in the batter.
