Description

Enjoy a Classic Caesar Salad, packed with rich flavor from a homemade dressing, parmesan cheese, and crisp romaine. Perfect for a quick, healthy meal!


Ingredients

  • 1 large egg yolk
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1/2 cup olive oil
  • 1 teaspoon anchovy paste
  • 1/2 cup grated parmesan cheese
  • 2 cloves garlic, grated
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon cracked black pepper
  • Salt to taste
  • 910 oz. romaine lettuce, chopped (~5 cups)
  • 1/2 cup shredded parmesan cheese
  • 1 cup croutons

Instructions

  1. Whisk the egg yolk, Dijon mustard, and lemon juice together in a medium bowl until frothy.
  2. Slowly drizzle the olive oil into the bowl while whisking vigorously until thickened.
  3. Stir in the anchovy paste, Parmesan cheese, garlic, Worcestershire sauce, and cracked black pepper, and whisk to combine.
  4. Add salt to taste and set the dressing aside.

Notes

You can adjust the amount of olive oil for a thicker dressing.
Feel free to add extras like grilled chicken for a heartier meal.
