- 1/5 lb roma tomatoes, seeded (6-8)
- 1 red onion
- 1/4 cup red wine vinegar
- 1/4 cup olive oil, extra virgin
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Cut the cucumbers and tomatoes in half, remove the seeds, and chop into 1-inch chunks.
- Finely slice the red onion into half moons and combine with the chopped vegetables in a large bowl.
- In a separate bowl, whisk together the red wine vinegar, olive oil, salt, and pepper, then pour over the vegetables and toss to coat.
